Lemon Garlic Roasted Asparagus
Low-carb snacking option that couldn't more delicious and easy!

“Velocius Quam asparagi conquantur!” – meaning ‘quicker than boiling asparagus,’ is an ancient Roman saying for something that can be done quickly. So, why not take advantage of the ease of asparagus to ensure your body gets all the vegetables it needs each day!
Delicious, healthy, and super easy a snack is all one can ask for. And this asparagus recipe is just the right package. I enjoy roasting (and relishing) these to the bits. Crunchy on the outside and soft on the inside, this vegetable had myriad benefits too! It detoxifies your system, reduces puffiness in your skin, soothes inflammation, and the likes.

Ingredients
250 gms Asparagus Spears (Tough Ends removed)
1½ tbsp Olive Oil
½ tsp salt
¼ Black Pepper
2 Garlic Cloves (crushed)
½ Lemon juice & zest
Directions
Step 1: Preheat your oven to 400 degrees
Step 2: Remove the tough ends of the asparagus spears by snapping at the point where the hard and tender parts meet
Step 3: Place the asparagus spears on a parchment paper-lined baking sheet
Step 4: Whisk together the oil, salt, pepper, and crushed garlic in a small bowl
Step 5: Brush garlic oil over all sides of the spears using a pastry brush.
Step 6: Bake asparagus in the preheated oven for 11-13 minutes, or until tender and bright green.
Step 7: Just before serving add half a lemon juice and zest to it. Enjoy!
Cook’s Notes Pro-tip- If you want to take it up a , place the asparagus spears on an oven-safe wire rack. This would allow the hot air in the oven to contact the asparagus on all of its sides!
